Tabbouleh Salad

1/2 Cup Burgul (cracked wheat)  Cracked Wheat for Tabbouleh Salad Recipe

1 cup chopped Tomatoes
1 cup chopped Cucumbers
1 cup chopped Green Onions
Salt  & Pepper to taste
1 cup chopped flat leaf parsley or 1/4 cup dried  Organic Parsley

1/2 cup chopped mint leaves  or  1/4 cup dried mint        Mint

1/3 cup   extra virgin olive oil      extra virgin olive oil

1/3 cup fresh  lemon juice     lemon juice
(1) Wash cracked wheat, changing water a few times, drain, cover with boiling water and set aside.

(2)  Chop all vegetables and combine with Lemon Juice and Olive Oil, and salt and pepper

(3) Drain wheat through strainer and press out as much a=water as possible. Toss Wheat into vegetable mixture. Chill for one hour or more before serving.

Yield 4 cups.
