Blueberry Crepes, How to Make

Ingredients & Directions To Make 4 Blintzes Crepes 1/2 cup Aunt Jemima complete pancake mix 3 eggs 1/4 cup water nonstick spray

Crepe Pans

mix all but nonstick spray in blender until it is smooth and creamy let sit for at least 5 minutes, mix briefly, then preheat frypan, spray liberally with nonstick coating, pour in 1/4 of the crepe mix, tilt pan until crepe mix evenly covers bottom of pan, cook lightly for about a minute or so, sides of crepe should come up easily when touched with a spatula, use spatula  gently turn over crepe and cook on other side for about 30 seconds transfer to plate

Crepe Filling 4 ounces of cream cheese 1/2 cup cottage cheese Combine in small sauce pan, gently heat over medium to low heat  stir until thoroughly combined and warmed Divide into quarters among the 4 crepes fold crepes over in thirds

Topping 1/3 cup Lori's Blueberry Jam microwave for 30 seconds Divide amongst 4 crepes garnish with dollop of  plain yogurt (can also use sour cream, whipped cream or vanilla yogurt) LOVE THIS BOOK! A MUST READ!
