1 pound mussels on the half shell
Bring 2-3 cups of water to boil, drop in mussels, simmer for 4-5 minutes, drain, remove mussels from shells, set aside until rest of sauce is ready.
2 tablespoons olive oil
8 ounces mushrooms, sliced in half
1 medium onion, chopped
1 tablespoon chopped garlic
1 1/2 cups peeled, chopped tomatoes
1 teaspoon oregano
1 tablespoon basil
Heat olive oil, toss all ingredient except tomatoes in, saute for 3-5 minutes, add tomatoes, stir thoroughly, add mussels, stir again, cook 1 more minute, then serve over pasta.
