noodles 1 cup of Soya Mince (TVP) 1 tablespoon chopped garlic 1/4 cup BBQ sauce 3/4 cup water 12 baby carrots, sliced into fourths 1 cup baby fresh spinach leaves, chopped 1/2 cup chopped onion 3 large stalks of celery, sliced thinly 1 tablespoon dried basil 1 teaspoon water 1/2 can baby corn nuggets 2 1/2 Cups Shredded White Cheddar Cheese 3/4 cup milk 1 teaspoon dry mustard 1 tablespoon dried tarragon leaves 2 eggs beaten, set aside 2 teaspoons coarse ground pepper 1 teaspoon Sea Salt 1/2 cup Shredded White Cheddar Cheese 1/2 cup ground crackers or bread crumbs Paprika for garnish |
Step By Step Preparation Guide Line springform pan with heavy foil, (optional) spray with nonstick spray, set aside until rest of casserole is ready, preheat oven to 350 degrees Bring 2 quarts of water to boil in large pot , toss in pasta, cover and cook 20 minutes until done, drain thoroughly then toss back into large pot, set aside, but add other ingredients as they become ready Mix soya mince, BBQ sauce, garlic and water together in microwave bowl, microwave on high for 5 minutes, stir when done, set aside until noodles are drained, then toss into large pot with noodles Place carrots, spinach, onion, celery, basil and the 1 teaspoon of water into microwave bowl, stir, cover and microwave on high for 5 minutes, when done, drain any excess water, toss in with noodle mixture Place cheese, milk, mustard & tarragon in microwave bowl, microwave on High for 2 minutes, stir thoroughly, microwave in 1 minute increments until cheese is completely melted, then stir in thoroughly with noodles and veggies Add pepper and salt to complete pot and stir again Stir in beaten eggs thoroughly with pasta & veggies. Transfer casserole ingredients into springform casserole pan Cover with 1/2 cup shredded cheese, then top with ground crackers Carefully pat down casserole with clean hands Sprinkle paprika in 3 straight lines across top of casserole Bake for 30 minutes Let sit for at least 20 minutes (don't worry, it will still be extra hot!) Pop sides off springform pan Casserole is ready to slice into pie shaped wedges Leftovers can conveniently be wrapped up in foil. If making this as a dish for company, then omit the foil lining, spray springform pan with nonstick spay, and if you let it sit the 20 minutes, after cooking, it will pop from the pan and serve up beautifully! |
